One more recipe for today – and this is a favorite (most likely because the mango salsa is so good!)

Ingredients:

How to make:

  • Marinade and bake the tilapia fillets according to the Easy Salmon post
  • Heat tortillas according to package directions
  • Cut baked tilapia and fill into tortillas (makes approx. 6 tacos – depending on how much fish you put in each shell)
  • Fill tacos with a spoonful or two of salsa – Done!

Side option:

If you don’t have a Whole Foods or want to make the salsa yourself, below is the recipe (the Vidalia Onion Chop Wizard would work well here too!):

  • 2 mangos, chopped
  • 1 small red onion, chopped
  • 1/2 cup of chopped cilantro
  • 1 jalapeno pepper, minced
